1/2 cup
butter
1 cup honey
2 eggs
1 tsp vanilla
1 3/4 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 cups quick-cooking oats
1/2 cup chopped nuts
1/2 cup finely chopped apples
1 cup seedless raisins
In large
mixing bowl, cream butter and honey until fluffy. Add eggs,
one at a time, beating well after each addition. Stir in vanilla.
In medium bowl, stir together flour, soda, baking powder, salt
and cinnamon. Add dry ingredients to honey mixture beating until
smooth. Stir in oats, nuts, apple and raisins. Drop by teaspoonfuls
onto greased cookie sheets about 2 inches apart. Bake at 350F
for 10 to 12 minutes or until cookies are golden brown.
