3/4 cup
raisins
1 cup shredded apple
1 cup shredded cheese (use cheddar, swiss, or provolone, for
example -- not too soft, not too hard)
2/3 cup vegetable oil
1 egg (or, 2 egg whites)
1 tsp vanilla
1/2 tsp cinnamon
3/4 cup wholewheat flour
1/8 tsp baking soda (optional)
1 1/2 cups oats (old-fashioned or quick)
1/3 cup brown sugar
1/2 cup favorite chopped nuts (optional)
Combine
all moist ingredients in a large bowl; combine all dry ingredients.
Then add dry ingredients to moist ingredients and stir well.
Drop by rounded spoonfuls onto cookie sheet. You may wish to
chill the ingredients first and shape into balls with your hands,
instead. And, you may also desire to flatten the dough on the
sheets with the bottom of a glass or criss-cross with the tines
of a fork.
Bake at
375F for 12 to 15 minutes if the cookies are large (used a rounded
tablespoon) or at 350F for 10 to 12 minutes for smaller cookies
(used a rounded teaspoon), until cookies are set and lightly
browned, at least on the bottoms.
You can
vary the fruits (dried and/or fresh), nuts, cheeses, spices,
grains, maple syrup/honey for brown sugar, etc., for different
tastes and textures.
